Spaghetti with Shrimp and Tomato

Ingredients:

250 g of Spaghetti
200 g of shrimps
1-2 cloves of garlic
3 tablespoons of Fondo Gionino Extra Virgin Olive Oil
2-3 ripe of tomatoes (or peeled tomatoes)
2 tablespoons of tomato sauce
Salt, to taste
1 chili pepper
Parsley, to taste

Instruction:

Step 1

Boil plenty of water. Once boiling, add salt and spaghetti. Cook two minutes less than the package time, as they'll finish cooking with the sauce.

Step 2

Peel the tomatoes: Make a cross on the bottom, boil for two minutes, drain, and peel. Remove seeds and liquid, then cut into cubes.

Step 3

In a wok or non-stick pan, heat Fondo Gionino Extra Virgin Olive Oil. Add chopped garlic (or whole if removing later) and minced chili pepper. Add diced tomatoes, cook for a few minutes, then add tomato sauce and pasta water. Salt and cook for ten minutes.

Step 4

Remove heads and shells from shrimp, devein, and rinse under cold water.

Step 5

Before draining pasta, add shrimp to the sauce. Add al dente spaghetti and chopped parsley. Finish cooking, adding pasta water if needed.

Serve the Spaghetti with Shrimp and Tomato immediately.
