Mussels “Alla Marinara”
Ingredients:
Mussels – 1 kg
Garlic – 1 clove
White wine – 70 ml
Parsley (chopped) – 1 bunch
Fondo Gionino Extra Virgin Olive Oil – 20 g
Black pepper – 0.3 g (≈ a pinch / to taste)
Preparation:
Step 1
Clean the mussels by removing the beard (byssus) and rinsing them thoroughly under
cold running water.
Step 2
Finely chop the washed parsley.
Step 3
Heat Fondo Gionino extra virgin olive oil in a large pot with high sides.
Step 4
Add the whole garlic clove (or crush it with a garlic press) and let it cook for a minute
until fragrant.
Step 5
Add the mussels, stir well, and cook over medium-high heat.
Step 6
Pour in the white wine and allow the alcohol to evaporate.
Step 7
Cover the pot with a lid and cook for about 5 minutes, or until all the mussels have
opened. Shake the pot occasionally without removing the lid to help them open evenly.
Step 8
Add the black pepper and the chopped parsley, then stir one final time.
Serve the mussels immediately while hot, together with their flavorful cooking broth and
some crusty toasted bread.
